  • Emulsifier is a type of surfactant typically used to maintain emulsion (mixtures of immiscible fluids) well dispersed.

2. Briefly explain the chemical structure of emulsifier.
  • Emulsifier have a hydrophobic and hydrophilic end. The glycerin backbone of a fat triglyceride is hydrophilic, and the three fatty acids attached to it make the entire molecule hydrophilic.
